This cast iron skillet Utah red trout was prepared for a College Reunion.  The dish was served family style.  The Red Trout was prepared with corn meal dust crusted, Park City Farmers Market selected bing cherry salsa with sweet onions, red & gold peppers, serrano chile, and cilantro.
