This Salmon Gravlox dish was prepared alongside bagels and Charcuterie at brunch for a long time client of mine. With a wood fired pizza party the night before, we wanted to leave them a parting gift to make the next morning special.
We took Scottish salmon and cured it for 12 hours with a mixture of Park City’s High West Whiskey, brown sugar, and kosher salt. The peaty whiskey flavor added a little spice alongside cloves, cinnamon, and both black and green cardamom.
