This dish was the first course in a 7 course sit down Rocky Mountain themed dinner for one of my favorite clients from this past winter. They are big time foodies, and even brought their own cheese and salami for the night!
This dish consists of corn spoon-bread stuffed tamale husks with the works. We paired it with pieces of Peruvian corn snacks, pickled apples, apple cider salad, and montmorency cherry preserves. The main course was our own elk rack.
